Agars

Agar agar is a gelling polysaccharide extracted from marine red algae, consisting mainly of agarose and agaropectin. It dissolves in boiling water and sets into a firm, clear gel that remains solid at incubation temperatures, a property that made it the standard solidifying agent for microbiological culture media.
