Fatty Acids

Fatty acids are long-chain carboxylic acids, saturated or unsaturated, that behave very differently depending on chain length and double-bond content. Short and medium chains such as caprylic and capric are liquids at room temperature; palmitic and stearic are waxy solids with sharp, reliable melting points, which makes them useful as calibration standards in thermal analysis.
